A little time on the grill transforms Ontario feta cheese, tomatoes and olives into a hot and smoky delight to savour on grilled country bread.
Preheat grill to medium. In a medium bowl, combine cherry tomatoes, olives, 3 tbsp (45 mL) olive oil, salt and pepper.
Place feta in the centre of a large square of foil. Top with tomato mixture; fold edges over and seal to make a tight packet.
Grill packet for 15 to 18 minutes or until feta is soft and tomatoes are bursting. A few minutes before end of cooking time, brush slices of bread with remaining olive oil and grill for 2 to 3 minutes per side or until toasted.
Transfer feta mixture to serving dish and scatter with parsley, mint and oregano. Serve with grilled bread.
