This comforting soup has all the family’s favourites in one. An extra sprinkle of cheese always hits the spot!
In a soup pot, melt butter over medium heat. Add sausage and onion; cook, stirring and breaking up sausage into small chunks for about 5 minutes or until no longer pink. Stir in carrot, garlic, Italian seasoning, and hot pepper flakes; cook for 3 minutes.
Pour in broth, cream, salt, and pepper; bring to a boil. Reduce heat to low and stir in tortellini. Cover partially and simmer gently, stirring occasionally for 5 minutes or until tortellini are just tender. Stir in spinach and cook for about 2 minutes or until wilted. Serve sprinkled with Parmesan cheese.
