Serve up this delicious combination over some greens for a different first course or en-joy it for lunch. The fresh herb and cheese combination makes it a winner.
Preheat oven to 350ºF (180ºC). Line the bottom of a 9-inch (23 cm) springform pan with parchment paper; set aside.
In a large bowl, stir together feta, gouda, eggs, yogurt, green onions, dill, mint, and garlic until well combined; set aside.
Lay 1 sheet of phyllo out on work surface and brush with butter. Gently crumple it up and place it into prepared springform pan. Repeat with remaining phyllo sheets to cover the bottom of the pan. Bake for 10 minutes or until light golden. Remove from oven and pour feta mixture over top and spread evenly. Return to oven and bake for about 30 minutes or until set and golden. Let cool about 10 minutes before cutting into wedges.
