Instructions

Step 1

Preheat oven to 350°F (180°C). Melt butter in a Dutch oven over medium-high heat. Season pork with 1/2 tsp (2.5 mL) salt and pepper, then sear in pan for 8 to 12 minutes or until browned all over.

Step 2

Add milk, shallots, garlic, chili peppers, orange peel and oregano to pan; bring to a simmer. Cover and transfer to oven. Cook, basting occasionally, for 2 to 2 1/2 hours or until pork is very tender.

Step 3

Meanwhile, in a small bowl, combine pineapple, onion, cilantro, jalapeños, lime juice and remaining salt. Refrigerate until ready to serve.

Step 4

Transfer cooked pork to cutting board and shred meat with two forks. Transfer to serving platter and drizzle with some of cooking liquid to moisten.

Step 5

Serve pork in tortillas garnished with salsa and feta.

Cook’s Tip

If desired, spread shredded pork on rimmed baking sheet and broil for a few minutes to make it extra-crispy.
