In a large bowl, whisk together flour, sugar, baking powder and salt. In another bowl, whisk together buttermilk, eggs, butter and vanilla. Pour over the flour mixture and whisk until smooth. Stir in bacon.
Heat waffle iron. For each waffle brush lightly with oil; pour in about 1/2 cup (125 mL) of the batter. Close the lid and cook for about 4 minutes or until steam stops and waffle is crisp and golden (the time and amount will vary depending on the size of your waffle iron). Repeat with remaining batter.
Serve with berries, cream and maple syrup.
